Chewy Ginger and White Chocolate Cookies

These are chewy cookies with a warm, spicy surprise. A perfect companion to your cup of tea.

It’s been a minute, but I’m serving you GINGER SPICE. Ginger is a Christmas spice but it should be used all the time and not just in curry and chicken noodle soup. It improves everything, adding some cool heat to that sweet cookie.

I have so many cookie recipes on this blog already. So why not rack em up?! I’m adding to my collection with this one. It’s different to the other ones, I promise. You have no excuses for not baking so get to it.

Makes 8 cookies (unless you make them super small or super large)

The Cookies

  • 100 g butter

  • 70 g molasses/treacle/golden syrup

  • 1 Tbs milk

  • 200 g plain flour

  • 3/4 tsp baking soda

  • 1/2 tsp salt

  • 1 Tbs ginger (in the spice aisle)

  • 1 tsp cinnamon

  • 1/4 tsp cloves

  • 1/4 tsp black pepper

  • 2 tsp freshly grated ginger

  • 125 g caster sugar

  • 1 egg yolk

  • 180 g white chocolate chopped

To make the biscuits

  1. Pre-heat your oven to 150’C.* Prepare oven trays with a silpat mat or butter and baking paper.

  2. Place flour, baking soda, sugar, salt, freshly grated ginger and dry spices in a bowl, then whisk together.

  3. Place butter into a saucepan with the treacle/molasses and heat until the butter is melted. Once melted, remove from heat and add the milk. Set aside.

  4. Add egg yolk and melted butter/syrup mix to the flour and fold until combined.

  5. Add the white chocolate and distribute evenly.

  6. Rest in the fridge for 30 minutes to 48 hours.

  7. Use an ice scream scoop and spoon onto the prepared trays. Place spoonfuls so there is space between balls for spreading.

  8. Bake for 20 - 24 minutes until golden on the edges.

  9. Cool on trays for 8 minutes then move to cooling rack or your mouth.

Notes:

* As per usual this is 150C fan forced, if using conventional go 160-165C

*You can add chopped dates, toasted pecans or crystalised ginger instead of the white chocolate

* You can roll the cookies in demerara sugar to give them a crunchy exterior

final thoughts…
